ALLSPICE (JAMAICAN) POWDER
Pimenta dioica
Strongly aromatic, like cloves with a hint of cinnamon and nutmeg; the taste is similar, but with some peppery heat.
Used to create the spicey Jamaican jerk, as well as a meat stuffing and marinade base.

Caraway seeds were so revered by sixth-century Persians that citizens used them to pay taxes.
Said to improve iron deficiency: brew a daily tea of caraway seeds (to improve iron absorption) with parsley (an iron-rich herb).
A staple of cooking for more than 5,000 years, Caraway adds flavor to eggs, cheese, creamy soups & sauces, cabbage, beets, spinach, potatoes, snap beans, peas, zucchini, pork & fish. To avoid bitterness, add crushed or whole seed only 15 minutes before serving.

Coriandrum sativum
Quite different in taste and use from the seed of the same plant (coriander), Cilantro is the leaf which has gained great popularity as a flavoring in cilantro. For a spicy relish for poultry or lamb, combine 1/2 cup of dried coriander leaf with ½ cup dried mint, 2 cloves of garlic, juice of 1 lemon, a minced hot chili & a handful of blanched peanuts in a food processor. Add a bit of olive oil during the processing until smooth.

CINNAMON - POWDER
Cinnamomum cassia
Aromatically, it is a favored ingredient in many potpourri blends or to simmer in an open pot of water with other spices to freshen the kitchen. In its powder form it is blended with other powdered spices for preserving and scenting pomanders.
A pinch of powdered cinnamon added to tomato sauce brings out the natural sweetness of the tomatoes.
